Weekend Coffee Share

imageIf we were having coffee, I would say good morning to you from Montauk, NY.

This morning is our last day out here and it has been such a lovely time. So please pull up a chair and join us on the deck for some coffee, tea, juice, or whatever pleases you.

We packed the whole kitchen with us, since we stayed at The Beachcomber in a lovely suite with a full kitchen. Thursday, Dave and I headed out east to celebrate his upcoming birthday, and our 1st anniversary, which happens to be on the same day.

Normally I wouldn’t think to stay in such a place because who really wants to do dishes on vacation lol but since I have to make sure there is something safe for me to eat, we at least knew there was a stocked kitchen to go back to if there was a lack of gluten-free options out at The End.

The options were not as scarce as I had imagined, and although it was still a struggle to find restaurants that could accommodate and even understand what gluten was, I don’t want to bore you with all the details now but I’m sure we’ll get together tomorrow for more chit-chat, it was all in all a great experience.

So tell me, how has your weekend been? Any exciting things happen, or adventures you’ve gone on? I do hope you also have enough to drink,  I can tap you off if you’d like, as I plan on going for another cup myself. I was smart enough to bring my own coffee, because even though there were a few coffee spots, we visited during the off-season, which begins Memorial Day Weekend.

We spent some time on the beach, took a walk through downtown Montauk, saw the Montauk Lighthouse, and Dave even indulged me in taking a trip to Camp Hero State Park. Yep some conspiracy theories always float in my head, we ate at some phenomenal restaurants, spent some quality time relaxing together and even though it rained on Friday for most of the day, we made the most of it just chilling out in the suite watching movies, cooking and cuddling on the couch.

Montauk is only about an hour drive east of where we live, and although it’s close enough to home in case of an emergency, it was still just the away time we needed to spend with each other.

I hope you enjoyed your weekend, and I look forward to catching up with you tomorrow when I can tell you all the juicy details about our weekend getaway. Here are some pics of our adventure… until tomorrow.

Have a great weekend 🙂

Weekend Coffee Share ~Mothers Day Edition

First and foremost, I’d love to wish all the lovely Mothering Women out there a Happy Mothers Day. I hope your day is filled with love, joy and laughter, and maybe even a few minutes to yourself to go pee in peace 😉

imageWelcome to Weekend Coffee Share, I haven’t done one of these in a while yet again, because lets face it I’ve been sucking in the blogging category lately. Life has been so full of continuous running and it’s been hard to keep up. Especially with A to Z Challenge, which recently ended at the end of April. It was fun, but sometimes draining to come up with posts, and with the kinks of Jury Duty thrown in the mix it kinda jumbled stuff up a bit.

But today I’m here, taking a little break from the weekends festivities to sit and chat with you for a bit. Grab a cup of your favorite beverage and sit a spell.

How was your week? Any exciting things happen? And if your a Mom, or able to celebrate with your Mom or someone who you admire as a Mom figure in your life, how was your Mothers Day? I hope it is going well and you’re enjoying it.

We had a fun filled new recipe trial at Dave’s house this weekend. His oldest son, J who loves to get in the kitchen and cook, was dying to try some new recipes he found in a new cookbook he got with his Mom. So when they came over this weekend, we attempted to make some new things.

  • Field green salad, with tomatoes, mushrooms, celery, carrots, olives, cucumbers, and thousand island dressing.
  • Mussels in white wine sauce, and tomato sauce for dipping on the side.
  • Roast Pork, with apples and mushrooms, mashed potatoes, sweet potato chips, roasted carrots, buttery biscuits
  • Key lime pie with gluten free graham style crust, whipped cream.

The day began with preparing our menu, looking at the cookbooks and then going food shopping. He was a great help and was really interested in all the ingredients and how we would make it, and more importantly what it was all going to taste like. Dave and his youngest son, N went to Lowe’s and picked up the new BBQ grill he got earlier in the day. They worked together putting it together while, J and I were cooking in the kitchen.

Needless to say, about 5 hours of cooking yielded wonderful results. Except for the very sticky mashed potatoes because I left them in the pot of water after they boiled and didn’t drain them out. Oops so a quick call to my Mom and she confirmed they were that consistancy because they were in the water too long. 😦 Cooking fail makes the rest of the meal that much better. Right? Haha. So we resorted to instant mashed potatoes that we doctored up with seasonings. That combined with the 9 drops of green food coloring for the Key Lime pie and let’s say it turned into a Science experiment as well as a Mathematical Equation. 9 drops of green food dye = 6 drops too many. BUT it tasted fantastic. It was the first time I’d made one, and also the first for J. We dubbed it the RadioActive Green Lantern Key Lime Pie.

He has a tradition with his mom that when they try a cookbook recipe, they take notes and jot them down in the book. Write down any changes, and of course the purpose: if it was good enough to make again. So we did just what he would do with his mom and made soem notes. I’d say all in all it was a successful experiment that yielded wonderful results.

Do you have any recipe traditions at your house?

My Mom and I use an old Betty Crocker and a Good Housekeeping cookbook from when she first started cooking. There’s also a really old Italian Cookbook that I love the recipes from.

This morning  they tried making me coffee 😉 cleared off an extra special area of the kitchen table for me to eat breakfast, and surprised me with a card, journal, and a lovely pair of earrings. We watched some Myth Busters, and Food Network which has become Sunday Morning tradition around here. J kept talking about the next set of recipes he’d like to try from the cookbook, and wants me to show him how to bake bread. Next time young Jedi, next time. 🙂

J and I even packed up a special little dessert sampler so he could take them home to his Mom. He’s worried that she wouldn’t like the key lime pie, or worse yet, wouldn’t want to even try it because of the shocking green hue. I reassured him that as crazy colored as it looked, it still tasted delicious. Honestly it was the best Key Lime Pie I’ve ever eaten. And I was sure mom would be just as thrilled by all his hard work and effort in creating it, just as much as enjoying the flavors of it. But to be on the safe side, he asked to take the mini cupcakes I brought over on Friday night, just in case she hated the pie she’d still have a little something sweet on Mothers Day to enjoy.

It’s really been a lovely weekend, now I’m sitting down with my second cup of coffee, well the real first cup of coffee, it’s decaf don’t worry lol, and I’m relaxing while David is outside putting the finishing touches on the new grill.

I hope your day was filled with fun and laughter and you enjoyed our chat and coffee. See you soon!

If we were having coffee…

imageI’ve finally had a moment to sit down and enjoy a cup of decaf. It’s already 5 pm probably by the time this gets posted and I’m exhausted, so decaf will do. It’s all good though, I’m not complaining.

So grab yourself a cup of what you like, pull up a comfy chair and enjoy the view.

Dave’s watching Paul Blarth, Mall Cop, funny movie if you haven’t watched it before, and I’m here curled up next to him but blogging for a little bit.

We had a funfilled weekend with the boys. On Friday night we all went to a Chinese Auction at the local middle school for their SEPTA fundraiser. (Special Education Parent Teacher Association) It was filled to capacity with people, and they apparently raised over $23,000 on this their 20th anniversary. N even won a basket of baking utensils, cookbooks and some other goodies that he gave to his mom.

Saturday was an outdoor adventure day and we took them out to the nature trail I go to quite often, and although it was mixed with some slight apprehension of “getting out in nature” they enjoyed every minute of it and are looking forward to going back again. We packed a nice lunch for everyone, went inside the visitor center/educational center and checked out the animals/flowers/trees and basically everything that create the protected wildlife marshlands at the National Wildlife Refuge. After some time in there, we headed out on the trail with hopes of catching a glimpse of the Bald Eagle that has a nest nearby. No such luck on catching that view, but our views were nonetheless just as lovely.

They boys, all three of them 😉 came with me to the coffee shop, and I got a little caffiene pick me up just in time before the rain started coming down. They ate their lunches, but I was embarressed by the fact that I assumed something with Dave’s youngest son, N. He’s a bit of a picky eater, and I packed a Lunchable with lite bologna in our cooler for him to eat while we were out. He swears he loves them and eats them all the time, so when I saw he ate everything but the bologna, I thought he just didn’t want the protein again. Afterall he ate the cookie, crackers, and cheese but no meat. I asked him what was going on, but said “how come you’re not eating the cookie? are you saving if for later?” He says no and has this look on his face like he’s upset. So of course I don’t know what’s going on and that’s when he pulls back the plastic wrap he had crumpled up inside the bologna part, and I wanted to vomit. The damn bologna was green molded!!!! Seriously I was ready to freak out. I never buy these for him, neither does his dad, and I double and triple check expiration dates ALL the time and he I was again looking at the date. May 10th, 2016! This should not be molded. I showed Dave and was so embaressed. That’s the last thing anyone wants to do is feed someone something that is bad. N took the package from me and ran to the garbage and threw it out. The person I am was like….wait, I should take it back to the store, I only bought it yesterday this shouldn’t be happening. But at that point it was too late. I wasn’t garbage digging for moldy bologna. Luckily I had other food packed. I’m always over prepared lol. And he had plenty more to eat. When we got home we played Headbandz yet again, and watched some of the original Star Trek episodes with the boys last night. I had no idea they liked Star Trek, the original that is. Which I think extremely cool.

And today was a nice relaxing day at home watching How it’s Made, and some Food Network. J keeps asking to cook with me, so I’ve got to get an idea of something he would like to eat so we can make it together the next weekend they are over. Of course this evening wouldn’t be complete without some finishing touches on the laundry/walk in closet room. It’s almost done, just need to put the clothes back on the hangers and the dressers into the room.

After a long weekend even the cats are a little exhausted taking in the setting sun. Now I bid you a good evening, because I’ve got some relaxing to do myself. 🙂

Thanks for joining me in Weekend Coffee Share~See you soon.

Weekend Coffee Share: Let’s try this again

imageIf we were having coffee, I’d ask you how your week has been and what is going on this weekend in your life.

Grab a cup of coffee, tea, or whatever your favorite beverage is and join me for a little coffee klatch, Today I’m opting for a cupa tea. Actually all weekend I’ve decided to forego coffee and stick to tea. I don’t even know why I decided to do this, but it didn’t last long. By 3 pm on Friday afternoon, I was headed to the closest coffee I could get. Unfortunately it was a *bucks…Yes I won’t even type it out because the coffee is miserable. I wanted a cold brew, and it was the end of the pot so to speak. Bitter and beyond drinkable, and although I don’t use much sugar or sweetener, there wasn’t enough sweetness to kill the bad taste it left in my mouth. Waste of money but what did I do. Yep I drank it anyway. Well most of it. Today, it’s tea, and lets see how long I last with it.

Dave and I finished the renovation of the laundry room on Wednesday night, but we don’t have use of the washer or dryer as of yet. Some kinks in the connections, but we will address them after the holiday weekend.

Speaking of the holiday, how are you planning on celebrating? Any big plans? Big meal that you’re preparing? Easter egg hunt that you are trying to plan out? My only advice is to make sure you keep track of where you hide the eggs you were given by the Easter Bunny. You don’t want to have a rogue egg lost among your sofa until the August heatwaves roll in. 😉

We did an egg hunt a little early, because we weren’t going to be spending the holiday with Dave’s boys. Thankfully we were given the plastic eggs you fill with treats by the Easter Bunny or we would have been in trouble, because we hid 27 of them, only to retrace our steps and come up short each time we tried to find them all. However  they were all found, and  in record time.

imageHope you are enjoying your drink, it’s time for me to top off of my tea. It’s, one of those damp dreary days outside, although it’s quite comfortable inside snuggled up and relaxing with my guy by my side as I type and Food Network is playing.

We just got back from brunch from a nearby restaurant and although the food was spot on I was perplexed by the choice of decor they used on the tables. It wasn’t your normal flower centerpiece, maybe a seasonal choice of tulips or daffodils would have been better than the WHEAT stalks that were to my left. See them right there, what is that? Who puts wheat on their table. Ok maybe for me it’s a bit more odd than any other person who might come to the restaurant and see this. I am gluten intolerant and although this isn’t a gluten free restaurant they did offer safe food to eat. I had to take a picture. Because, well it’s WHEAT lol.

I am gearing up for the A to Z challenge which will begin April 1st. I’m going with my Randomness theme again, because it suits me, but I am trying to incorporate a few more interesting things among the 26 days that are before us. And I’m looking forward to finding other blogs to read as well.

I haven’t participated in a Weekend Coffee Share in almost a year, and it is by far one of my favorite link ups to participate in. Ok it’s the only one I participated in but it still is my favorite. I try to do my Monday Musings posts that are similar in a coffee klatch manner, but please do me a favor and check out the Link Up listed below and follow along the other bloggers who are looking forward to sharing a cup of coffee with you.

If we were having coffee: Monday Musings?

Dang has it been a while or what?  I have taken a long break from my coffee share posts and at the end of every weekend I feel a twinge of sadness because I’ve really missed linking up with you all. One of my favorite posts were the Weekend Coffee Share, I have no reason why I haven’t done them, except that my weekends have been busy. I try to do a catch up on Mondays with my Monday Musings posts, but let’s be honest, it’s just not the same 😉

So grab a nice cuppa something hot, or cold if you prefer, grab a comfy cozy chair and join me for a bit.

So how have you been? How was your week, any exciting things happen? Did you go to any St Patrick’s Day Parades, or go anywhere fun?

We opted for a painting party.

We interrupt this regularly scheduled, Weekend Coffee Share, for a: Monday Musings. Life gets in the way and sometimes we just have to regroup and start over again. So here we go. Hope you refreshed your coffee cup, or what have you, and are ready to face the day.

Our weekend got away from us, yet again. A mixture of good and the bad.

Good because we celebrated Easter a little early and had an Easter Egg hunt all set and ready to go for Sunday morning.

27 eggs.

The Easter Bunny entrusted us to hide 27 eggs around Dave’s house. We filled them with money.  One large one had a single penny, one was empty, and a few smaller ones had dollar bills, but mostly change, and when we went to recalculate where we had hid them. We miscounted. 25, then 26…never 27. We must have walked in and out of rooms and up and down stairs 5-6 time each. We made a list, and always came up short. We couldn’t blame it on the cats, as poor little Lilo has been sequestered in the upstairs bathroom with a recent diagnosis of Pancreatitis, and her sister Stitch was very mushy keeping to herself upstairs in our bed. J was asleep and it was just the two of us not able to find this damn egg. Thankfully we didn’t have any real eggs, cause well that would just be stinky and nasty if we couldn’t find it.

And as I just mentioned, our poor little Lilo has not been doing well. The last week or so she had been having accidents around the house. Her litter, which isn’t too far away, seemed to be too far away for her to reach in time. She already has bad stomach problems, and is on a daily steroid medicine, but something just wasn’t right with her. A trip to the vet on Thursday, some blood work, more medicine which includes a probiotic, antibiotic, and a probiotic paste the poor thing lost 1.5 lbs in 3 months I believe. If this was the case with her plump sister, there wouldn’t be such concern. But, Lilo is petite, and that is a large weight loss. On Friday morning after a follow up call with her Vet, the Vet diagnosed her with Pancreatitis.

Things took a little turn for the worse come Sunday morning. After, J found all the eggs, yes all 27 of them. Thankfully! He did much better than his dad and I did 😉 Lilo still wasn’t eating, or drinking, and she was still having accidents even though she was confined to a smaller space with a litter box, bedding and food (all separate from each other cause we know cat’s wont eat and shit in the same small space) We tried 6 different wet foods, we gave her the dry food she likes, and finally by 1 pm on Sunday she ate some canned tuna fish. Not the best thing but at least she was eating something. We’ve been monitoring her closely for the last few days, and will continue to do so. Luckily by the end of the day when David came home, he found that she had eaten 1/2 a can of the wet Friskies food, and about 20 pieces of the dry food. We actually counted how many pieces of food (yes this one we counted properly 😉 ) so we could monitor how much she was eating. She also drank some water, but still not going to the bathroom. We will revisit the Vet by Wednesday to see what we should do next. Please keep her in your thoughts, send some good vibes, say a little prayer, whatever it is you might do.

Through all the Easter Eggs, Corned Beef & Cabbage, Clam Chowder, and kitty health scare, David and I have been painting and cooking up a storm. If someone was there to photograph us, let me tell you it was a sight to see. Even, J couldn’t stop laughing at us. We got more paint on each other than we did on the walls at some point. It was all in good fun, and honestly in all my years and my past relationships, I’ve never been able to do something like painting a room, or fixing an appliance with my boyfriend without getting into an argument of who knows more about what to do. It is so refreshing. He’s renovating the laundry room/walk in closet and we went and picked out new floor tiles a few weeks ago and the contractor was able to finish up the work and design I picked out in pretty decent time.

So we decided to freshen up the walls and lets say we did a damn good job of painting. Our only problem, we didn’t get the right finish lol. It was a gloss finish, but we picked out the same color Cozy Cottage, but got the eggshell finish instead. So after our first coat of touch ups dried, we realized we needed to do the whole damn room. So we did. Then there were spots on the ceiling that he messed up lol so that lead us to having to do the ceiling over. And wouldn’t you know the white ceiling paint he had was the wrong shade of white!! Another trip to Home Depot for paint and we repainted the ceiling, but we opted for more of the Cozy Cottage in an eggshell finish because lets face it…we are not painting professionals so we really couldn’t screw this up. Walls and ceiling same bright color and it came out really good. Now to get the washer and dryer back into the room, after we seal the floor tiles. The room should be complete by Thursday and I’ll snap a pic or two for an update.

To top off our already interesting weekend, we went to bed with a beautiful sunset, all to wake up in the morning with snow. Yep the first day of spring has sprung, with a snowfall. It was beautiful from sunset to sunrise.

I hope you enjoyed your weekend, and had a lovely Monday as well.

Wordless Wednesday

If we were having coffee, the Connecticut weekend edition

IMG_5868 Coming to you live, well almost, from Connecticut.

If we were having coffee, I’m having my yogurt and chex cereal instead. I woke up famished and honestly being away for the last few days was well worth it and much needed. I’ll be running downstairs to Starbucks in a little while so please make yourself comfortable and enjoy a cuppa whatever your pleasure.

I’ve been in Connecticut for a few days and although there is wifi available the damn thing kept giving me issues until about 20 min ago and I wasn’t able to connect the new laptop into the casinos wifi. However, our iPhones were both able to connect seemlesly. Go figure!!

My week, although light or more like absent from blogging, had nothing to do with writers block I’m happy to say. It was all for other reasons, some extremely good, others out of my control like the wifi issue. I’m happy it was mainly for good reasons 🙂

And dare I say, I haven’t been this truly happy in I don’t know how long. It feels great, it feels out of the ordinary and honestly I can’t compare it to anything else in life. Sounds corny but it’s true.

IMG_5855My view the last few days has been pretty sweet, and so has this outside view from the hotel window. Today however, there was much overcast and clouds, they seem to be just lifting now but still not picture worthy.

I do hope that you all have a fantastic weekend. I know I’m enjoying the time away and the company.

Still in that mindset of too good to be true, but I’m going with the flow and enjoying the time.
